I am going to have a go at Paul’s recipe but I noticed he left both the 6″ and the 10″ cakes in for 2 hours.  I didn’t think the 10″ one looked quite done even though the knife came out clean.  I am planning an 8″.  Any tips on  cooking  times please? Jx
