This looks fabulous! A couple of questions. Do you put anything in the tins to stop it sticking? Like a release spray? And how do you stick it to a head for example? Thanks Danette

Sarah- Thank you so much for watching! No I do not have to put anything in the bottom of the tins. I just use a butter knife to slide under on bit of the candy and pop it off. You can also pour it into a heat resistant plastic or silicone cup and just tap them out. You can just apply the dragons beard directly onto the cake with just a little water. Or in this case you can create small fondant panels and layer the candy onto it and the apply the panels to your cake. I hope this helps! 🙂

      The recipe is:
      2 cups sugar (200g)
      1/4 cup Corn Syrup (75g)
      1/2 teaspoon vinegar
      1 cup of water (236g)

      Bake at 271F / 133C for 10 mins.

What is the best way to stick this to fondant/modelling chocolate etc? Also how durable is it once applied to a cake (particularly for show/competition purposes)?

The dragon’s beard is extremely fragile, but if you are sticking to fondant or modelling chocolate you should use a sugar glue (or mix of water and sugar). Make sure that the surface goes tacky first then gently place the dragon’s beard on, which should hold it in place.

Thank you for this demonstration. How long will it last in the open air? Can you make it in advance and if so how do you store it? Also can you use a shine spray on it so it doesn’t disintegrate?
