A Brief History of Sweet Lemon Desserts

Lemons have long been a cherished ingredient in sweet desserts, prized for their vibrant aroma, tart flavour, and refreshing finish. Their culinary journey in desserts can be traced back thousands of years, with origins in Asia before spreading across the Middle East and into Europe via trade routes. Though initially valued for medicinal and preservative purposes, lemons gradually found their place in sweet dishes.

In medieval Europe, citrus fruits were considered exotic and luxurious. With the rise of sugar in the 16th and 17th centuries, chefs in wealthy households began experimenting with sweetened lemon recipes. Early lemon puddings were thickened with breadcrumbs or almonds before eggs and butter became common in the 18th century, leading to the creation of what we now recognise as lemon curd — a key component in many classic desserts.

One of the most iconic lemon desserts, the lemon meringue pie, originated in the 19th century. Its invention is often credited to Elizabeth Goodfellow, a Philadelphia pastry chef who paired tangy lemon custard with fluffy, sweet meringue to balance the sharpness. This dish exemplified a growing trend in dessert making: layering flavours and textures for more refined results.

In the UK, lemon drizzle cake gained popularity as a post-war comfort food, praised for its simplicity and zesty flavour. Meanwhile, lemon bars and lemon cheesecakes became favourites in American baking.

In recent years, lemon has enjoyed a resurgence in artisanal and gourmet baking, often paired with herbs like thyme or lavender, or ingredients like mascarpone and white chocolate, to elevate its brightness.

Today, sweet lemon desserts represent a timeless balance of sharp and sweet — a nod to centuries of evolving culinary tradition, from rustic puddings to sophisticated patisserie.
