Cake lace (Claire Bowman)

I have purchased some of the mix to make cake lace and followed Claire’s You Tube video on how to make it.
However mine has lots of air bubbles in mix. Does anyone have any suggestions as to what to do to get rid of these? I have paddled mixture and also left for 24 hours to see if that helps, but still have air bubbles?
Any help please.

Hello Tina

Have you tried spreading it over the mat? Sometimes the little bubbles pop and disappear into the pattern. The bubbles are just the process of incorporated air during mixing. If you lay your mat on a tray try banging the tray from the bottom to help the bubbles rise and pop. I know Claire’s instructions say to mix on high speed but mixing on a lower speed for longer, like making royal icing, will prevent too much air being incorporated into the mix, making less bubbles.
