How long will white chocolate ganach keep

I have a fair bit of white chocolate ganache left over from a cake I did last week. It was previously frozen a few weeks ago and it’s been in the fridge since this time last week. Would I still be able to use it to crumb coat a cake tomorrow or best just to throw it out?

Hi lynn-fraser

It wouldn’t be worth taking a risk since it was previously frozen. It does also depend on what the use by date was on the cream.
To prevent wasting large quantites of ganache, it is best to store it in small batches. The following blog may be of interest, hope it helps: https://www.cakeflix.com/the-shelf-life-of-ganache-by-madeitwithlove
