Welcome to the Cake Decorators Q&A
Flavours of ganache
I want to experiment with more flavours. I always use ganache and often use white chocolate ganache with my carrot and also with my vanilla cake. I was reading about the passion fruit and lemon curd. Can you add lemon curd to the ganache and if so when is it added and how much.
Additionally the passion fruit coulis. Does the cake last as long with these ingredients in the ganache and does the ganache harden the same as it does without them.
Thanks

My advice is to start with flavoured powders as they do not change the consistency of the ganache which will still set as normal. These can be added directly into the freshly made ganache and reduce the risk of bactrial growth. Fruit purees, curds and jams will affect the liquid content and consistency of the ganache. It may not set as hard, the shelf life will also be affected and will need refrigerating in some cases.
