Lesson 1 –  Day 1 – Preparing the dummies

This lesson should be preceded by Introductions with health and safety notices. Duration 20 mins

  • Stick each of the dummies to a cake card using ganache
  • Place in the fridge to help the ganache to set

NOTE: There is no video for this lesson as the course timings needed to be changed following this course, which meant using dummy instead of cake to keep the course to two days.

Lesson 7 –  Day 1 – Covering the bottom tier

  • Apply a thin layer of trex (or a sugar/water mix) to the sides and top of the cake
  • Cover the cake
  • ensure a smooth finish, but don’t worry too much as the sides will be covered in decorations

Lesson 10 –  Day 1 – Preparing the board

  • Cover the board and add the ribbon
  • Stick the two cake drums together and place in the centre of the iced drum to give height
  • Add some bling to cover the sides of the drums
  • Stack the base tier on top of the drums

Lesson 11 –  Day 1 – Preparing the peony petals

  • Roll out the flowerpaste to its thinnest depth on the veiner board (the thinner the better)
  • Using the cutters and ball tool shape the petals
  • Wire them up through the vein

Lesson 12 –  Day 2 – Adding the ruffle roses

Demo: 25 mins    Activity: 4 hrs

  • Cut out very thin sugarpaste strips (use a pasta roller to standardise)
  • Measure out where you want the roses to sit
  • Place cocktail sticks in the shape of the rose then wrap the strips tightly around
  • Repeat the process around the cake (only decorate half the cake in class)

Lesson 13 –  Day 2 – Stacking the middle tier

Demo: 5 mins    Activity: 20 mins

  • Finish the top of the roses with a decorative strip flowing over the tops of all of them
  • Stack the 6″ tier on top

Lesson 14 –  Day 2 – Stacking the top tier

Demo: 5 mins    Activity: 10 mins

  • Mark out the centre of the 6″ tier then dowel the cake with a card on top
  • Add the top tier, checking its level with a spirit level
  • Add a decorative ribbon

Lesson 15 –  Day 2 – Removing the cocktail sticks

  • Remove the cocktail sticks from the roses
  • Wire up the petals in preparation for putting the peony together

Lesson 16 –  Day 2 – Making the peony

Demo: 5 mins    Activity: 45 mins

  • Create a hook within a trimmed bunch of peralised stamens
  • Tape the stem
  • Add the petals to create the peony flower
  • Do the same for all three

Lesson 17 –  Day 2 – Dusting the peony

Demo: 5 mins    Activity: 20 mins

  • Select your dust colours
  • Brush the petals to give that realistic effect
  • Finish all, including the undersides

Lesson 18 –  Day 2 – Adding the peonies

Demo: 10 mins    Activity: 35 mins

  • Spray the flowers with glaze
  • Place the posy pics into the peonies going into the cake
  • Position the peonies and open the flowers
  • Finish with the decorative wires
