1. Cutting the trophy

Paul has made himself a template and places it on top of the cake which he then carves around. If this were a 3d cake Paul would be using dark chocolate ganache to cover the cake but as it is lying flat, the less structurally supportive milk chocolate ganache will do fine.

2. Carving and ganaching the trophy

Paul starts by adding a curve to the trophy by shaving little bits of cake off around the edges. Then it’s on with the first layer of ganache all over the cake and then put in the fridge to firm up. To make the cake smooth, use a combination of acetate smoothers and clean wet hands.

3. Covering the trophy

Paul rolls out a large piece of sugarpaste to around 3mm thick and covers the trophy. He then adds some thin sausages to bring the trophy to life.

8. Transferring the cake and adding the handles

Paul is having second thoughts about covering his beautiful board but in the end decides he must. It actually works out quite well and even with the handles added, it doesn’t take away too much from the board. Paul makes the handles by shaping sausages of sugarpaste and then starts glazing and painting the trophy.

Paul gets the glaze, dusts and ribbon out to add the final touches to bring it all to life.
