1. Preparing the stand

Paul talks us through his design, then starts by drilling holes in to hold the large dowel, which will support the entire cake.

2. stacking and ganaching the cake

Here Paul stacks, layers and ganaches the cake to form a nice solid tower shape. As this is going to be an old tower, it doesn’t need to be perfect, so don’t spend too long on this stage.

3. Covering the cake

Paul rolls out a massive piece of sugarpaste and shows us a great way to cover the cake, without fear of stretching or losing shape.

4. Making the top of the tower

Paul gets thrifty with a plastic food tub that was used to package some sugarpaste, and uses it to create the top of the tower.

6. Adding extras to the tower

Here Paul adds some nice details to add character, including moss growing up the side of the tower as well as windows and other little extras. Then it’s onto creating the contraption that will hold the secret info.

8. Making the dragons

9. Making the dragons

Paul starts by making the heads of the dragons and then attaches them using spaghetti and a lollipop stick for extra security. He attaches the wings once they are dry.

Paul gets the airbrush out and starts gradually building up the lovely colours. Just be careful when colouring the wings as spraying them too much will make them curl up beyond repair.
