Piping leaves and crocodiles The theory behind the leaf and crocodile is this – when you are using your leaf piping nozzle think of it as a crocodile and rest it’s chin on the surface you are piping – you will get a perfectly piped leaf. Soft peak royal icing is most appropriate when piping leafs as well.
