1. Internal structure

To make the internal structure, Paul drills a hole into both cake drums then attaches the threaded rod using nuts. Paul then covers the threaded rod with tinfoil and a layer of ganache to make it food safe.

2. Stacking, carving & ganaching

In this lesson, Paul shows you how to align your cakes so that the dragons are slightly offset which gives the dragons a realistic look as if they are balancing on each other.  Once the cakes have been stacked, Paul carves them into the desired body shape then covers them in a layer of dark chocolate ganache.

Paul covers the top cake by placing the sugarpaste over the top then pinches the folds and cuts them off before using acetate smoothers to finish it off.
