Cake timeline

Hi

I have a 2 tier cake to make for this coming Sunday; vanilla sponge and chocolate cake.

I’m going to bake the cakes Wednesday morning and then ganache and cover them on Friday morning.

My question is, will they keep ok for those couple of days before ganaching? I would usually ganache the following day but a busy week means I need to fit them in a little differently but I’m worried they may dry out.

Hi Laura Forskitt

The cakes will be fine. Just cover them up in cling film, store in cardboard Cake boxes and set them in either a very cool room or freeze until required.
If freezing, remove from freezer the day before and defrost in the box still covered in cling film to retain moisture. Depending on weather temperatures, cakes can either defrost on the counter or in the fridge.
