If using powdered dust to colour ganache, does colour intensify the longer it's left?

Yes, it does develop to a darker shade. Best thing to do is colour the ganache a shade lighter than you need. Let it develop for a couple of hours and add more colour if it needs to be darker. I usually mix the powder colour with a little melted coco butter to make mixing easier.
