For the buttercream, try and use a very white butter at the start. Lurpak, Aldi and Lidle’s butter tends to be lighter in colour than other brands. Beat the butter for several minutes until it becomes fluffy and even lighter. To that, you can add buttercream whitening like Sugarflair super white or Wilton’s whitening. These can be used in buttercream or in ganache.
