dense coffee cake recipe

Hello 🙂

Does anyone have a moist coffee cake recipe? Mrs Jones coffee and walnut recipe is apparently too light for sugarpaste, I need coffee cake as part of a 3 tier cake so need something dense and hopefully moist! Can anyone help? Thank you!

You can use any dense cake recipe and infuse it with coffee paste made from instant coffee. Coffee brandy flavoured simple syrup brushed on cake layers will also help intensify the taste as will coffee or mocha flavoured buttercream or ganache. When I make dense coffee cake I add vanilla extract to the coffee paste for the cake batter, moisten cake layers with coffee brandy simple syrup and fill with coffee Italian buttercream.

Just omit the lemon in the zingy lemon cake and make up the fluid with the same quanitity of coffee to the desired strength.
For coffee simple syrup boil together equal quanitites sugar and water and instant coffee to taste. Boil for a couple of minutes, cool and use to brush both sides of cake layers before filling. If using brandy reduce the water by the amount of brandy being used. When the syrup had cooled add the brandy.

If you would like to consider the above recipes I would suggest making small trial cakes to see whether you like the texture. Both these recipes have been used by site members in their original format with good feed back.

thank you so much miwl – yet again! I have made the bbc easy vanilla cake and turned out well so i’ll adapt that as you suggest – thanks 🙂

I should also have said that I crush the walnuts and mix them in the filling. The coarse walnuts add flavour and texture to the filling. Hope all goes well 🙂
