Egg white powder

Is egg white powder the same as meringue powder. Also how much do you add to buttercream to help it crust a bit more. Thanks

Egg white powder is dried egg whites. When rehydrated, it is used exactly in the same way at wet egg whites. Meringue powder contains dried egg whites and other things like corn starch and possibly cream of tartar. These are all the ingredients which would be required to make a stable meringue. As it contains these other ingredients, it can help crust buttercream. How much is used, depends on the amount of buttercream there is and on how warm the weather is. Begin with a couple of tablespoons and allow the buttercream to rest. Add more if required.
