Freezing ganached cakes before adding fondant

Hi, can I check if I defrost a ganached cake to cover in fondant how do I avoid the condensation from the defrosted cake. thanks Lesley

Defrost the cake overnight in a cake box at room temperature to allow the condensation to dissipate. Before icing, feel the cake, it should be just tacky but not wet. If it has dried too much, brush the surface with a little boiled water to help the icing to stick. Hope this helps and if you need more information please post again. 🙂
