how far in advance can I bake and keep a sponge cake

I am making the topsy turvy cake for Friday, can I start baking on the Monday before so that I can do decorating each day Tuesday to Thursday as it needs time to set for the Friday. I am out at work during the days so want to do a bit each night Monday to Thursday

I find sponge cakes start to stale slightly after three days so I avoid baking them if the decorating time exceeds that. Most bakery sponge cakes have a shelf life of 5 days and supermarket sponges are full of weird preservatives to extend shelf life.
It will probably be fine under fondant, brushing a simple syrup on the layers before filling will also help to keep it moist and act as preservative. To make simple syrup boil equal quantities of water or juice and sugar, boil for a minute, cool and brush onto cake layers. The syrup soaks down and keeps the cake moist. Madeira has a much longer shelf life (approx 2 weeks) and is also very good cake for carving. For information on madeira cake just type in the search box ‘madeira’. x

pretty sure once its covered in fondant it will last for well over a week. I made my sons 1st birthday cake on a wednesday, covered it on the thursday and it wasnt cut until 7 days later and it was absolutely perfect, still moist and tasted wonderful. Cakes not covered in fondant will keep for a few days but will start to dry out. Once its crumb coated and covered in fondant it seals all the moisture in so it will last for a good week or more. I had a client tell me they cut their cake 3 days after i made it and were still eating it a week later and it was still as good as the first slice.

It will keep for approximately 5 days depending on the filling and covering and storage. Oil based cakes don’t stale as quickly as butter cakes. Best way to know for definite, is to bake a small trial cake and each day eat a piece to test freshness. Keep the cake stored in an air tight container.
