Ideas for covering a coffee and walnut cake

Hi everyone
I’ve been asked to do my uncle’s 85th birthday cake for about 30 people but he wants coffee and walnut. His son has requested scouting and air force embellishments. What suggestions do you have for covering the cake with something other than buttercream? What works well with it?
Thanks in advance for your help.

Hi vickster20

Coincidentally I made a coffee, vanilla and hazelnut cake just yesterday!

Each layer was drenched with brandy simple syrup and filled with mocha flavoured chocolate buttercream laced with hazelnut praline. Walnut praline would taste lovely too. Just roast them a little to enhance their flavour.

Although my cake wasn’t covered, I would normally cover it with mocha ganache. All you do is add coffee to the cream when it’s being heated and add it to the chocolate. Mix as usual.

I hope suggestions helps. If you need more info just post again. ?
