It’s fine to freeze cake filled and covered with ganache. Once filled and covered, let the ganache set then cover the cake with cling film and double box it before placing in the freezer. To defrost, remove the cling film and place cake back in the box and allow it to defrost on the counter top the day before it is required.
I wouldn’t recommend freezing fondant decorations as the sugar in the fondant can react adversely on defrosting. However, fondant decorations can be made several weeks ahead and stored in a card board box. Make some holes in the box to allow ventilation and store in a cool room until required.
