Leaving the walnuts out of your coffee & walnut cake

Hi there, I would like to make the cake above without walnuts. Do I add more flour? Thanks in advance. Patricia

There is no need to add extra flour as the weight of walnuts in this recipe is not significant enough to make any difference to the outcome of the cake. If you take a look at the ingredients, you will see it is just a variation on victoria sponge cake. If you want the taste of the coffee only, omit the walnuts. Just make a good strong paste from the coffee with slightly less water than given and add it to the batter as any other flavouring. You'll have a nice coffee cake instead! The taste of walnuts, however, does raise the cake to a new level. Add some vanilla extract for an extra taste lift. It's up to you 🙂
