lemon flavoured ganache
Looking to make a lemon flavoured white chocolate ganache to cover a lemon madeira.Any ideas??
Using 3:1 ratio chocolate to cream;
infuse lemon zest into the cream during boiling. If you don’t want the zest bits, strain the cream over the chocolate.
Juice lemon/lemons according to how lemony you want the ganache to be.
Pour hot infused cream on chocolate and gently emulsify. Add lemon juice and stir until smooth and silky. Leave to thicken for application.
I also add vanilla bean paste, it really, really enhances the lemon flavour.
For an additional lemon hit, make lemon simple syrup and brush over both sides of cake layers before filling.
