Macaroons

i have made the macaroons along with Helen Vass, all good till i took them out they deflated and didnt look cooked though i did them for between 8/10 mins on gas 2 any ideas

Hi Nikki

Macarons can be a bit unpredictable. If you made them on a wet day or if your kitchen was a little humid, can affect their performance. Slightly over mixing the batter will also make a difference to how they rise and keep shape. It’s important to let the piped batter rest until it forms a skin. Test it with the tip of your finger and it should be dry to the touch. Don’t give up on them! Everyone has a problem with macarons at some point but eventually it comes right. 🙂
