Can someone give me advice on how long in advance I can make a cake, covered in ganache and sugarpaste? If I made it and finished it on Wednesday, would it be ok for cutting on Saturday?

It really depends on the cake recipe. However, ganached and under icing, most cakes are good for around five and seven days from baking to eating. This is providing the filling is not fresh dairy, cream cheese or custard based.
