Paul Bradford Olive Tree cake

How long will this cake stay fresh as I was thinking of making it as a wedding cake. And what would be the best way of cutting it for guests. Sorry for silly questions I am a novice. Thank you

Paul used a chocolate Madeira cake in his tutorial which, in the video he says he baked a week ago. That implies the cake has a good shelf life. Normally Madeira cake can last up to approximately a fortnight.

If you assemble all the olive tree leaves and make the armature, make up the board and do all the peripheral work, you could make the cake up a week ahead and still have time to decorate within your timeline.

You could also bake the cakes well ahead and freeze them until you’re ready to decorate. Wrap the cakes up in several layers of cling film, and either place them in cake boxes, or in plastic bags before freezing. Take the cakes out of the freezer the day before they required for assembling and decorating.

Please let me know if this helps, and no question is silly. My only concern is, that you’ve said you are a novice. If for any reason you might feel this project could cause you any problems, it might be better to avoid the stress of taking it on, particularly as it is to be a wedding cake. Good luck. Edit:
The wedding venue will know how to cut the portions as long as you let them know that the roots of the tree is also cake which can be used for additional portions.🙂
