raspberry cake recipe
Does anyone have a decent recipe for a raspberry flavoured sponge cake. I remember Emma Ball made a lovely one for Mishs 50th collection of cakes. It wasn't a cake with actual raspberries unless they were blended 1st. Any suggestions???

I find using freeze dried or powdered raspberries will give a good flavour without changing the consistency of the cake. Mrs Jones’ vanilla sponge and her Madeira recipes are both excellent.
Another way would be to make a reduction from the raspberries and add directly into the batter. Baking time may be affected by the adding sauce.
For more flavour, use raspberry reduction as an element of the filling.
