Hi Alican

Did you manage to cover the cake? If not, yes you could do it in panels like in the Jimmy shoe box tutorial but you will have joins which won’t completely blend in. Paul’s cake has really sharp edges so it can be done! I usually blend seams in with a damp finger or do a piped decoration where the joins meet. Like you I have problems icing large cakes, however I bought an extra long rolling pin for the purposes of lifting, this has helped enormously. I’ve also seen some decorators using plumbers piping which they’ve sanitised for the sole use on cakes. A lot of people use The Mat, although it can be hard work rolling out using both pieces of the plastic. Rolling out on it works well with the KingPin.
I don’t suppose much of this helps you right now, I hope you’ve manage it. x
