Wedding cake advice

Hi
I have to make my brother a wedding cake and im going to use Mrs Jones fruit cake. How long in advance can I make it and what is the best way to store it until the big day. Any advice would be great.

Mrs Jones fruit cake can be stored for two or three months. Storage instructions can be found here:

Thanks for your reply. I’m going to bake a 10 inch square cake but not sure how long to bake it for in a fan oven would 5 hours be too long?

Yes I think that would be about right, although the scaled up ingredients is virtually twice as much as in the original recipe. It is possible you may need to bake slightly longer than 5 hours. I would check it after 4.5 hours to make sure the top is not over browning. If does start to brown too quickly protect it with a square of parchment. Please do keep an eye and nose on your cake.

Just a bit of feedback. I baked Mrs Jones fruit cake and baked it for 4.5 hours and thankfully it turned out great. I baked it on the 14th of September and once cooled it i double wrapped the cake in greaseproof then clingfilm and then tin foil and placed it in the cupboard. I have then brushed the cake once a week with brandy.The wedding is on the 14th of November do you think the cake will be ok stored this way until the wedding day?

I’m so pleased your cake turned out well. You’ve wrapped it nicely as well. If you do have an airtight cake tin it won’t harm to pop it in there. Otherwise it will be ok as long as you expel as much air as possible while re-wrapping I think it could do with a little more feeding with brandy from now until a couple of weeks before the wedding. All you need to is warm a little brandy, make little prick holes all over the cake and pour the brandy over the cake. Wrap it up and keep it upright so the brandy soaks in. The following week do the other side so the cake has an even feed.

Thanks MIWL. I will do that. Because it is a 10″ square cake it is hard to get an air tight container to fit especially with all the wrapping. Fingers crossed it’s ok.
