Piano cake sugar paste

Hi! I will attempt this cake tomorrow. I was just wondering why Paul airbrushed the cake black rather than using black sugar paste?

Hello Linda

There’s no reason why you can’t use black paste if you find it easier to do. The only thing to look out for is the brown internal parts. Paul is airbrushing to build the colour up and he says the colour has a shine. If you use black paste and want it to be shiny just use a little confectioners glaze or PME spray clear glaze. If you’ve got gum arabic powder, mix some up with a little water and paint it on to build glaze layers on the black. Gum Arabic glaze recipe can be seen here:
