1. Millionaire's shortbread

  1. First of all you want to preheat the oven to 160 degrees Celsius (fan) and lightly grease a Swiss roll tin with a lip.
  2. Place the plain flour and caster sugar in a bowl then add in room temp butter. Knead the mixture together until it forms a dough then press it into the base of the prepared tin.
  3. Make sure the dough evenly spaced in the tin then prick with a fork. Now bake in the oven for 20 minutes or until golden brown. Once out the oven leaves to cool. 
  4. To make the caramel, combine the butter, sugar and 2 tins of condensed milk. Gently bring to the boil stirring using a whisk until the caramel reaches a nice golden colour. This will take between 10-20 minutes. Pour the caramel over the shortbread and leave to cool. 
  5. Now it’s time to make the topping. Melt 200g of milk chocolate either over a pan of hot water or in the microwave.
  6. Pour over the caramel and leave to set for 10 minutes. Cut into squares, for dinner parties cut into 1 inch x 1 inch or for man size 2 inch x 2 inch.
