Nancy’s Carrot Cake

1. Baking the cake

There’s quite a bit of prep in getting everything ready, but once you’re prepared it’s very quick to put everything together.

TIP: Make sure you have pre-heated the oven

After 1 hr and 20 mins the cake is ready. Depending on your depth and size of tin as well as the temp you bake at your timings may vary.

2. Paul Hollywood’s - cream cheese frosting

In this lesson you’ll need:

50g butter

200g philadelphia cheese (full fat)

100g icing sugar

Zest from one orange

3. Nigella Lawson’s - cream cheese frosting

In this lesson you’ll need:

175g butter

200g philadelphia cheese (full fat)

215g icing sugar

4. Gemma’s Bigger Bolder Baking - cream cheese frosting

120g butter

480g philadelphia cheese (full fat)

300g icing sugar

Vanilla essence

5. Putting them together

To finish Paul and Nancy apply the cream and add decorations.  

6. Taste test

Paul and Nancy taste all 3 finished toppings and give their verdict on which one they think is best.

Carrot cake with Nancy downloadable tools and ingredients

Grams to lbs

Inches to cm or vice versa

Other US to metric and Metric to US

Ingredients for 2x 8” Round cakes (2.5″ depth)

Pre-heat oven to 170C for 1hr 20mins (fan assisted) – adjust depending of cake size and oven type

Mix up until all mixed through

650 ml vegetable oil

1.5 lbs sugar

8 eggs

1.5 lbs plain flour

Sift then add

2 tspn salt

0.5 tspn nutmeg

1 tspn baking powder

1 tspn all spice

4 tspn baking soda (bi-carbonate)

4 tspn ground cloves

6 tspn cinnamon

1.5 lbs grated carrots (grate in a processor)

Cream Cheese Frosting…

I want to mention that when you add any kind of zest to the cream cheese frosting the moisture from the zest will make the frosting softer. I cant wait to try this recipe.     Nancy, Thank you so much for this recipe. I had to make carrot cake cupcakes the week the tutorial was released so I made half the mixture and the cupcakes were terrific. I had tried other recipes and they never seemed to work. I made orange flavoured buttercream with a hint of nutmeg and it was as good as cream cheese !!!

      Hello =) ….. was wondering if moms recipe ( using normal buttercream flavoured with a cream cheese essence ) would hold up to fondant as would like to make this for a wedding coming up. thank you in advance =)

    Would just like to say thank you. Moms recipe has converted another non-carrot cake eater. I used this recipe for a 6″ top tier on a wedding cake and it went over a storm. Whilst making it, I had trimmed off the top to level and my hubsand walked past. He said he wasnt a fun, but would try it. He loves it. Have had to make him his own lol. Thank you so much. Not only is the recipe very simple to follow and make, it taste a dream =)
