10” round Madeira cake

I’m making the Mountain Scene cake for my husband’s birthday and am thinking of making it with a Madeira cake but haven’t a recipe for a 10” round cake only a 6” round so wondering if anyone has a recipe or can tell me how to increase the ingredients and baking time from the 6” recipe please. Also wondering if a 3” cake is deep enough for this cake or will I need to make 2? Only a novice at this type of cake so would appreciate some advice, thank you.

A 3″ deep cake should be plenty enough for the mountain scene. The cake is layered and stacked so you’ll have height.

Thanks. The lemon cake sounds wonderful, unfortunately I can’t have any citrus so have you any other ideas of flavours I could use please?

If you’re unable to use lemon or other citrics use vanilla or almond extract for flavour in the cake and leave the lemon out. Substitute the lemon juice with water or milk since you are not able to have any citrus at all. As long as you make up the liquid content it will keep the recipe balanced.
