about baking cake

Hi Paul, your work are amazing God bless you and your work. Paul are you using for all your sugar paste decoration sponge cake ? If you are using sponge cake it isn’t dry when eating?. Which cake you will suggest to bake for any sugarpaste decoration.

Paul uses dense sponge cakes in the tutorials because the are good for carving and shaping. You can use any cake you like as long as it it firm and can take the weight of sugar paste when decorated. Madeira cake is very good because it lasts for a good 2 weeks from baking to eating. To keep cakes moist brush the layers with simple syrup made with equal quantities of sugar and water or juice. Boil the ingredients for 1 minute and brush the cooled syrup over cake layers before filling and decorating. The syrup will also extend the shelf life of the cake by a couple of days.
