Alcohol free fruit cake

Hi!

Just a quick question about making an alcohol free fruit cake. I am fine with baking it with tea instead of alcohol to soak the fruit, but I’m concerned about how long it will need to mature.

Usually I would make it months in advance, but I’m worried about it going off without the alcohol to preserve? The wedding is in November.

Hi kirstybaird

If you bake it now, leave it to mature for about three weeks without alcohol for the flavour to develop. It can then be well wrapped and frozen until you need it. Wrap it up really well in parchement paper, several layers of cling film and then foil and a plastic bag. Place it in a cake box and freeze it. Bring it out three or four days before you need it to defrosts thoroughly. Keep it in the wrapping and defrost at room temperature. Fruit cakes freeze really well and the process makes them very moist. Let any condensation disperse before icing. x
