Altering recipes
Hi guys.
I heard somewhere that if you add more flour to a recipe it helps the cake become denser! I have a really nice chocolate cake recipe that rises well but is too light to carve! Does anyone know tips on this or if it will dramatically effect the taste of the chocolate cake!? Thanks

You could try adding more flour but it isn’t as simple as that. All the ingredients play a part in the way they come together to make the cake. Without knowing what your recipe is it isn’t possible to say how the ingredients should be altered to make the recipe more dense. Test kitchens take months sometimes years to develop and perfect recipes so that they can be available to people like ourselves. At home we can play about, & tweek a few ingredient proportions to find something a little different. I do it all the time, doesn’t always work but it does give an idea how ingredients interact. So back to the recipe you like, once you alter the ingredients it becomes a different recipe and you may not necessarily like it any more. x

madeitwithlove is correct – I have tweeked recipes before and they are totally different. I use the Wrights Chocolate Cake mix for chocolate cakes as you just add oil and water, and the cake comes out lovely for carving and shaping. Most supermarkets sell them, and then if you are happy with it, you can buy direct, but there is a minimum order quantity – I think it is three cases of 5 packs from memory, and they work out at around £1.20 a bag which is roughly the same price as the shops, but then that is delivered to you, and you do not have to factor in your fuel and time to shop when working out your selling prices. Their madeira cake is excellent too!
