bake how many cakes

hi, I am struggling with how many sponge cakes I should make for each tier. I did a recipe for a 8inch deep cake tin. yet when I had filled and covered the cake it ended up looking like a hat. Am I suppose to make two seperate sponge cakes? please help ! x

I’ve looked at this recipe and I really think it’s wrong as it uses more plain than self raising flour so of course the cake won’t rise due to lack of leavening. I would say it should be 185g self raising flour and 60g of plain which would make it into a basic madeira recipe. Mrs Jones’ recipe will be fine for tiered cakes as long as you use the same recipe for all the cakes and don’t stack a heavier cake on top. The Victoria sponge cake is very elegant and would make a a lovely wedding tier, however a madeira recipe has longer shelf life and would be better for the time needed for decorating and eating. It sounds like your sponge cakes didn’t rise as much as they should have. Did you use plain or self raising flour? If it was plain the recipe should have asked for baking powder or baking soda depending on the ingredients used. There are a few other reasons why cakes don’t rise, if you go to this blog http://www.cakeflix.com/blog/baking-the-perfect-cake-why-things-go-wrong it may help you. Mrs Jones’ vanilla sponge cake tutorial is an excellent to help you achieve a perfect sponge cake. One deep cake should rise sufficiently to be sliced into either 2 or 3 layers which when filled and decorated should measure approximately 3 inches or slightly more. Have another try using Mrs Jones’ tutorial. x

hi madeitwithlove, you are always so helpful. this was the ingredients I used.
250g butter, 250g sugar, 5 eggs, 185g plain flour, 60g self raising flour, 1 tbsp milk.
can’t remember which book I got it out of as I keep trying different ones.
I will try mrs jones as I have been in touch with her and made her cup cakes which turned out great. I will have a look at the site you put on too , thanks for that . when I do wedding cakes though will mrs jones sponge be alright for teired cakes or would I have to use medeira. sorry if my spelling is’nt great it’s my condition and dont know how to do spell check. thanks again bev xx

I have changed the amount of flours around and cake rose perfectly x
