Baking a cake

Hai, from the video Paul always cut half the
cake before icing it. What is the difference when you bake the
cake one off and when you dividen it to half and
bake it separately?

I usually bake my cakes in 2 tins and sandwich together, however the sides are much straighter if you bake one and slice in half.

You could bake the cake in two separate halves, but you will have to convert the recipe for half the mixture, unless you can bake both tins together on the same shelf. Placing one tin on the top of another will not allow your cakes, especially big ones, to bake at the same time, and you would have to swop them around half way through baking. Some times cakes will sink in the middle if you open the oven door while changing the tins around. Recipes which use baking powder and baking soda can not really be left to sit on the kitchen counter while one half bakes. This is because the rising agents begin to work straight away, so the half which will be waiting will not rise as much. It is much better, if you can, to bake as one cake and cut in half.
