basket of flowers
i am doing a basket of flowers for a retirement cake. It is a fruit cake. Is it best to do the basket weave in royal icing. Also what flowers would you suggest. All american websites do theirs in buttercream but I want to do mine with sugr paste is that best

If I did the basket weave in royal icing and the flowers in sugar paste do you think that would be ok. Not keen on buttercream

It’s done in buttercream and looks really tasty! I think to make it royal icing would be a bit brittle.
Obviously if you do prefer to do it in sugarpaste it may take a little longer. Rose Macefield’s fishing basket cake could be a good guide for the weave if you need a bit of direction. Here’s the cake:

That would work fine. The flowers would be brittle , although edible they wouldn’t be particularly nice to eat. I did Shawna McGreevy’s flower pot cake with gumpaste flowers, it looked lovely and the flowers were kept as a reminder of the day!
If you’d like to make it with royal icing and want it to be less brittle, add a teaspoon of glycerine to 450g of icing sugar. This will will give a softer consistency to the bite and be more pleasant. Alternatively you could make it all with piped ganache. Choice is yours!
ps just realised you have a fruit cake. Gumpaste flowers would be ideal for fruit cake. If it was done in buttercream or ganache it would have a shorter shelf life since they would go off faster than the cake. Stick to gumpaste! x
