Best Filling/ Coating for Sponge Cake?

Hi everyone,

Quick question, do you think the best filling for a sponge cake is always white chocolate ganache or do people use dark chocolate. Does it work as well?

Hello cazacakes

I use all the chocolates, although people who have my cakes prefer milk or white chocolate with sponge cake and dark chocolate with mud cake. I find white chocolate the most versatile for flavouring. You could add coffee to white ganache to make a mocha filling, dried fruit powders, alcohol of choice, or LorAnn oil flavours. I very often crush favouite biscuits and cookies into ganache of all colours. Inclusions not only give flavour but also texture. Available also are many flavoured chocolates which can be bought in blocks and used for making the ganache. If you’re based in the UK Aldi and Lidle stores have budget priced flavoured chocolates however all the supermarkets are now stocking good quality chocolates in all different flavours.
