What is the best vanilla sponge cake recipe for carving? I have made Mrs Jones recipe, and although this is nice,it breaks up and is too crumbly when I carve it.

Have you ever tried Jane Hornby’s easy vanilla sponge? It’s a really lovely cake which uses mainly self raising flour and also a small amount of plain flour. It makes a sturdier cake than a plain sponge but not as dense as a madeira which can be a bit dry. I’ve used it several times for carving childrens novelty cakes. See the recipe here:

Jane Hornby has other recipes all part of her wedding cake selection. They’re all equally as good as the other. I can recommend them all as tried and tested, never disappoint recipes.
