Best way to cover a cake drum with fondant

Hi. I have tried covering a cake drum with fondant using different methods but I am sure I am missing a couple of tricks.

I used to cover the entire cake drum with fondant and smooth it before placing a cake on top, but I read and heard that this method can make the fondant underneath the cake, ferment. So then I tried another method where I started placing the cake on the drum and covering the cake and the drum with fondant at the same time i.e. rolling the fondant out large enough to cover both. But this method doesn’t give a nice neat finish. I cannot seem to smooth the fondant on the cake and drum with a professional finish. Where am I going wrong and is there a better method?

Hi, i am quite new to this myself and asked a similar question the other week. Following the advice, I butter-creamed my drum and then my cake so not to contaminate the cake, after dividing the two with a small cake board I put fondant over it and the cake in one go. It was a great finish and gave me the height I needed. hope this helps

Hi Mandy

I used to have the same problem until I practiced the method shown in the tradition Christmas cake tutorial, it’s brilliant and saves on so much fondant. It takes two or three goes to get it right, ( practice on a dummy) now I can’t go back to the old method. Take a peek at the tutorial and just have a go, I couldn’t believe how easy it is. G’luck with it, some feed back would be good. x

Thanks for your answers. Very much appreciated. I have had a look at the traditional Christmas cake tutorial and will give this method a go. Fingers crossed.
