best white chocolate

could any tell me which is the best white chocolate to buy? and also is it ok to keep the white chocolate shard cake in the fridge once it has been finished?? thank you

I believe Paul uses Belcolade, I use Callebaut. There is also Valrhona and Guittard, all are available online through various cake decorating suppliers, just google to see suppliers. You could also use bars of good quality chocolate like Lindt from the supermarket.
Sometimes moisture from the fridge will make droplets of water on chocolate which can make streaky marks or the chocolate can bloom. Protect the cake by placing it in a cake box.
