butter icing-shelf life

Just had a thought as I am about to butter ice a cake…..I was thinking the shelf life would be that of the butter but there’s  a little milk in it so obviously this reduces the shelf life??  Am I right Gurus? xx

Hi loufairy1

Buttercream icing stores well for quite a long time as long as it is in an airtight container and away from strong smells.  The sugar is preservative so up to a couple of weeks would be fine, personally I wouldn’t eat it after that time, butter is dairy and it might start tasting a little rancid. If you make big batches, it freezes fine, I’ve frozen BC for three months without deterioration.

LOL, we’re all Gurus here, you made me giggle!   Hope this helps. xx

Hi annescakes1

I wouldn’t freeze it after it’s been in the fridge for a couple weeks just in case it has taken on any odours. If you’ve got left over butter cream just freeze it in small batches in double freezer bags and place in an airtight container. When you need some grab the amount of portions required. It will keep longer the three months but taste does begin to fade. I hope I’ve understood your question correctly.
