Buttercream covered wedding cake storage
Hi. I’m making a buttercream covered wedding cake. I’ve baked the cakes and will layer and cover them with buttercream tomorrow then stack on site at the venue. Would you suggest keeping the cakes once covered in buttercream in the fridge or will that dry them out … It would help if they were cooler when stacking although my journey to the venue is going to be an hour ? Thanks x

Hello b2eep
If you have the facility to store them in the fridge overnight that would be great and yes it will help to keep them cool while travelling. Keep the cakes in boxes if you can. Overnight refrigeration will not dry them. If you don’t have the facility the cakes will be fine in a cool room. If you live in a hot climate, in an air conditioned room. Either way store them in cake boxes to protect them from dust and from any little accidents.
If you have air conditoning in your car, turn it up when in transit to keep the cakes cool. I travel my cakes in boxes, on non slip mats in the boot of the car and place padding all around the boxes to make sure they are protected. Other people may do it differently and hopefully will share any tips they have. Hope this helps.
Wilton has a short video on storing cake after decorating and some information on transporting that may help
