Buttercream disaster.

Hi guys I was recently making Paul’s teddy cake all was going well till I got half way down my piping bag. When all of a sudden it started changing from the grey to grey and yellow. It was like the butter was melting in it. I had to keep emptying it out stirring it up and starting again. Was a right pain as you can imagine. It took me twice as long. Any ideas what could of happened?

Hi Lisajl

Yes, that’s exactly what has happened. The streaks of yellow are caused by the butter liquifying from the warmth of your hands. I know the teddy bear isn’t too big when piping but I think it’s still easier to rotate a couple of bags of buttercream to keep it cool. There’s lots of tips on the site on how to keep the buttercream structure strong while piping. Scroll down the page here for some excellent advice from member bellescakes:

Thank you very much I’ll have a look at them all now. Was worth all the hassle in the end. I love the cake might cry a little when my sister cuts it later it took that long lol. :). X

I’ve become hardened at heart now when it comes to the cutting. I was terribly upset when the first one which I made was cut into. I would have been fine if I hadn’t attended the birthday party.! Hard work it might be but think of all the love you are giving with it….. puts a smile on my face oxox

I’ll actually get to taste this one too. I’m just going make her look at it for a while first lol. I think it’s the best one I’ve done so far. The more I watch though the better I’m getting. I love this site Paul is now referred to as the cake master in my house 🙂
