cake doesnt rise as much as i want

Hi all,
When I bake my cakes I find they don’t rise into nice solid deep cakes even though the recipe suggested they would and I use deep cake tins. Any advice on what I can try?

Hi tiggerjr83

If you’re doing all the usual things like using ingredients at room temperature, creaming the sugar, butter and eggs until really fluffy, folding the flour, oven temperature correct, and they’re still not rising as much as you’d like, try making the lining paper about 2″ above the rim of the cake tin. Doing this can encourage the batter to rise a little more. You could also try filling your tin two thirds the way up, that would mean perhaps making ingredients for a slightly larger tin and using the left over batter up for a few cupcake. Try the lining paper first, might be all that’s needed.
