Cake preparation timing

Hi, Can someone help me with the timing of starting cakes as in when to bake in relation to day required. With mud cakes I am fine as they freeze well but lighter cakes dry out if made too far in advance.Also the timing between baking, buttercream and the fondant. I love mud cake and ganache but can anyone suggest a nice light cake recipe for children’s cakes. Many thanks.

For children’s sponge cakes I do a straightforward all in one victoria cake recipe. There are heaps of recipes for this method online. I find the all in one method stays moist longer than the creaming in method but is not as fluffy. It’s perfect for kids cakes particularly if you’re carving them.
