Cake samples

Hi, I have my first wedding cake consultation next week and another the following week. I want to provide some different flavour sample cakes. How do you all do this. Bake cakes and freeze portions so they are available when needed? Then buttercream and ganache when defrosted? Any advice?

Hi Jinny

I have no experience of wedding consultations however I’ll have a go with this answer. I am assuming that you’ve already discussed with your clients their preferred cake flavours and fillings. In which case it might be appropriate to have those as samples and perhaps include a couple of your own choice. The easiest way to create samples would be to bake off small slab cakes which can be portioned off to sample size. Have them ready filled then frozen. The samples can be defrosted the night before or very early on the day of sampling so they reach a good room temperature for the presentation. If you want to fill on the day you can make the butter cream and ganache up ahead of time and freeze. Defrost each filling 24 hours before required. Butter cream should be re whisked and ganache warmed in the micro wave on medium heat to bring it back to working consistency.
Warm ganache for 20 seconds and stir, then 10 second intervals or less, stirring after each warming. This can’t really be rushed as chocolate burns easily so gently does it.
I do believe samples are charged out . I’ve read online some bakers offer flavour samples of six cupcakes and charge approx £25.00. If the client makes a confirmed booking and pays a deposit, the amount for the samples is deducted from the final bill. Sorry I can’t be of more help.
