HI whats the best cake to make the teddy out 0ff and would butter cream do instead of ganache?
I used Pauls moist chocolate cake and this carved beautifully – tastes wonderful too!
You could use buttercream rather than ganache but I found using a dark choc ganache made the cake really sturdy. (It was so sturdy that I skipped the fondant step as I thought it was too much icing)
The other thing you could do is add structure to your buttercream (see Paul’s course on buttercreams)

Ganache is the best crumb coat to use because it sets fast and keeps the structure stable. Butter cream will not give the same stability. You can try it with a firmer butter cream by using more icing sugar and less butter.
Allow it to crust hard before applying the sugarpaste.
