Cakes freezing

Hi

Need advice I made a cake to freeze and had to go out so after it was out oven for a hour and half it was still warm. I wrapped in paper cling film then freezer bags before freezing. It was still warm but left it then to cool before placing in freezer. Do you know if the cake will be okay I am a bit worried now

Don’ worry, I’d say it will be absolutely fine. I have come across a couple of prolific cake makers who advocate wrapping and actually putting the cake in the freezer while its still slightly warm. The theory is that it makes cakes more moist. I have done it and they came out brilliantly. My only reservation is that it must make the freezer work hard, so only very slightly warm!

I think it also depends on what sort of cake it is as some of the more fluffier cakes can come out sticky. I can’t remember whether it was Delia Smith or Mary Berry saying ‘wrap the cake up while warm and place it in the freezer’, they were freezing fruit cakes. It must be ok if the two baking gurus say it, don’t worry.
